Why are sweet potatoes allowed while white potatoes are not?
Certain foods, such as white potatoes, have a high glycemic index, which means the carbohydrates they provide result in a large increase in blood sugar. Although they taste sweeter than white potatoes, sweet potatoes have a lower glycemic index.

What additional spices or flavorings can I use?
Seasonings can enhance the natural flavors of food without added butter, margarine, or salt. There is an abundant array of other herbs and spices that can add flavor and variety to foods. They have practically no calories and can be used in endless combinations. Experiment with the list of herbs and spices.

Can I drink coffee and tea?
This is an individual decision best left up to you and your health care practitioner. Large amounts of caffeine may have an effect on blood sugar and therefore insulin release, so it is generally recommended to consume herbal teas or decaffeinated coffee or tea.

Can I drink diet drinks?
While diet sodas contain no calories, because of their sweet taste, they often leave people desiring other sweet snacks. We therefore do not recommend them. We do recommend consuming 6-8 glasses of water a day, and low-sodium seltzer or mineral water may be used.

Can I use canned vegetables instead of fresh vegetables with this diet?
Fresh and frozen vegetables retain more of their vitamins with no added salt. If necessary, purchase canned vegetables without added salt or fat. Canned beans and legumes are generally acceptable.

Can I swap menus from one day to the next day?
The menus are meant as a guide for the kinds of dishes you may be consuming. Since there are certain types of food you should be eating in a particular day, you will need to pay attention to the exchanges under each menu so as to substitute one comparable menu for another. Keep in mind that some of the menu plans are designed for the 1300-calorie dietary program and some for the 1600-calorie dietary program. Choose from the appropriate menu for the program you and your health care practitioner have decided upon.

Do I have to mix UltraGlycemX with water?
UltraGlycemX is designed to be mixed in water. However, your health care provider may suggest other mixing instructions, such as the recipes we have provided. If you are on a calorie-specific dietary program, calculate the added calories (which are provided under the recipe in the Patient Guide).

Does UltraGlycemX contain caffeine or other stimulants?
The original version of UltraGlycemX contains no caffeine. Small amounts of caffeine are present in the natural chocolate flavor of UltraGlycemX Chocolate. Each serving of UltraGlycemX Chocolate contains less than a seventh of the amount of caffeine you would typically find in a regular cup of brewed coffee.

Why is cheese found in the protein group rather than the dairy group in the Patient Guide?
Foods in the protein category on this program contain few carbohydrates, while a serving in the dairy group contains a modest 10 grams of carbohydrates. Cheeses better fit the protein group, as they are usually low in carbohydrates and have considerably more protein per serving than the other dairy products listed in this group. However, since most cheeses are quite high in saturated fat, very few cheeses are included in this program.

Why are some vegetables (Category 2) found in a separate food group from others (Category 1) in the Patient Guide?
Category 2 vegetables have more calories and a higher glycemic index than most vegetables. They are to be eaten on a more limited basis than those "unlimited" Category 1 vegetables.

Can I substitute foods from one food group for another?
Generally not, as each food group has certain characteristics. Because there are some similarities, you may occasionally substitute the dairy group for a fruit group and vice versa. You may also substitute 2 servings oil for 1 serving nuts, and vegetarians may wish to substitute legumes for animal protein.

What can I use as a sweetener?
Stevia is an herb that appears to have no negative effects on blood sugar or insulin levels and is many times sweeter than table sugar. Found in most health food stores, stevia is available as a white powder or liquid, and can be used in cooking or added directly to foods. However, if you normally crave sweet foods, you should avoid all sweeteners, including stevia, in order to give your taste buds a chance to appreciate naturally sweet foods such as fruits, carrots, tomatoes, etc.

Can I drink juice?
Several pieces of fruit are needed to produce one glass of juice. It is advisable to spread out your 2 or 3 servings of fruit throughout the day rather than to consume them all at once in a glass of juice. Vegetable juice, on the other hand, is mentioned in the "unlimited" Category 1 vegetable list in the Patient Guide and is acceptable when prepared from the vegetables in that list.

Why is flaxseed oil only used in dressings or directly on food?
Flaxseed oil is easily oxidized and becomes rancid if heated. Olive or canola oils, which are more heat stable, should be used for cooking.

My digestive system doesn't handle legumes very well. What can I do?
Legumes are high in protein and fiber but low in fat. In addition, they have a low glycemic index. To increase your tolerance, increase your intake of legumes slowly over the course of 2-3 weeks. You can try soaking the beans in water for half an hour, then discard the water before cooking. You may also find that certain legumes work better for you than others. Experiment. Lentils and soybeans, for instance, are often easy for many people to tolerate. Enzymatic aids can be used as well.

What should I eat when I've completed the program?
Once you have reached your health goals, you and your health care provider should reassess your needs to determine whether you should continue with supplements or dietary changes, continue with UltraGlycemX, or possibly, one of the other Metagenics medical foods. A long-term maintenance plan involving the dietary program described in this booklet may help you maintain the health improvements you've made. The dietary portion of the program is a well-balanced, nutrient-dense diet and is acceptable for long-term use.

Blend, shake, or briskly stir UltraGlycemX PLUS 360° into water as follows:

Day 1-2: ½ scoop (11 g) twice daily into 4 to 5 ounces of water.
